Simple cherry cake – my favourite for picnics

After blueberries, I also found the last package of frozen cherries in our freezer. Last summer we had quite a great crop and we ate them for some weeks. Because cherries can’t be kept fresh for long time, I almost filled our whole freezer with packages of this delicious fruit. It was a great idea, because when the cold days hit we enjoy putting them heated into our breakfast oatmeal.

In summer I baked this simple cake for several picnics with our friends in beautiful Prague parks. It is easy to carry around, so it is an ideal outdoor cake. The smell of the cake reminds me of summer in this nice city and its gardens. What do cherries remind you of?

INGREDIENTS

  • 180 g cane sugar
  • 1 package vanilla sugar (10g)
  • 100 g softened butter
  • 2 eggs
  • 100 ml milk
  • 1 tsp vanilla extract
  • 200 g buckwheat flour
  • 1 pkg baking powder (12g)
  • 2 tsp cinnamon
  • pinch of salt
  • 200 g stoning cherries

DIRECTIONS

  1. Preheat your oven to 170°C.
  2. Beat in sugar, vanilla sugar and butter. Add eggs.
  3. Add milk and vanilla extract.
  4. Mix together flour, cinnamon, baking powder and salt in a separate bowl.
  5. Pour the dry mixture into the wet one and mix it well together.
  6. Pour the dough into a tart pan and spread the cherries evenly on top of it (no worries, they will drop a little towards the bottom of the cake).
  7. Bake the cake for about 20 minutes (until it is nice golden)
  8. Enjoy the cake 🙂
